  • 8 egg
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon red chili powder
  • salt as required
  • 2 tablespoon vegetable oil

  • 2 stalks curry leaves
  • 1/2 teaspoon turmeric
  • 2 tablespoon coriander leaves

  • Step 1 Make Idli

To make this dish first, butter up the idli stand and add one egg to each section. Let it steam for a while.

Use a fork and gently mix them. Steam the eggs for around 12 minutes and check whether they are cooked or not.

  • Step 2 Prepare the masala

In a pan, heat the oil and add mustard seeds and curry leaves from the top, add some salt and spices, along with some finely chopped onions and tomatoes. Saute them for a couple of seconds and then add turmeric, red chili powder, and salt.

 

  • Step 3 Toss the idli

Add the egg idlis to the pan and toss it well in the tempering. Garnish the egg idlis with coriander leaves and serve.
